One of my favorite recipes here is what Irina calls the "Mimosa salad"--which has layers of cooked potatoes that have been riced, shredded carrot, hard-boiled and riced egg, and tuna fish with a few other ingredients such as some diced onion and so on. The resulting dish is both beautiful and tasty. I have no idea whether this is in any of the Russian cookbooks or where she originally came up with it, however.

My wife makes exactly the same salad with the same ingredients and also calls it a mimosa salad so you can rule out your wife originally coming up with it.

Kasha? It can be made from buckwheat or barley.

And wheatlets (манная каша) and corn (cornmeal to be precise) and oats. However, I have to admit that I have never seen barley kasha  :biggrin:

For the record, I didn't think she originated it. By "came up with it" I did not know if she got a written recipe or learned to make itf from someone else, from a television show, or whatever. She would have told me had she invented it...

It's still quite good no matter where it originated.

Salad Neptune/Салат "Нептун"

Ingredients:
300 g shrimp
squid-300g
crab sticks, 200 g
5 eggs
130 gr. red caviar
mayonnaise

Preparation:
- Boil eggs, cool, separate the protein from the yolk, cut into a protein. The yolk can be left for decoration.

- Cook shrimp in lightly salted water.

- Then mix into boiling water, pre-cut into rings & calamari. Don't overcook!

- Cut the crab sticks.

- Add a couple tablespoons of mayonnaise, stir, and then add red caviar.

- Salt, pepper to taste, but I advise salt on top after everything is mixed because eggs and mayonnaise can provide enough salt.





Ингредиенты:
креветки-300 гр
кальмары-300 гр
крабовые палочки-200 гр
5 яиц
130 гр. красной икры
майонез

Приготовление:
1. Отвариваем яйца, охлаждаем, отделяем белок от желтка, нарезаем белок. Желток можно оставить для украшения.
2. Варим креветки в слегка подсоленной воде.
3. Затем в кипящую воду бросаем, предварительно нарезав на кольца, кальмары. Самое главное-не переварить их, иначе получатся резиновыми!
4. Нарезаем крабовые палочки.
5. Теперь добавляем пару столовых ложек майонеза, перемешиваем, и только потом добавляем красную икру (чтобы не полопалась).
6. Соль-перец по вкусу, но советую солить после смешивания всего, т.к. икра и майонез могут дать достаточно соли.

Salad "cake" with crab and corn.





Ingredients:
3/4 cup of rice (boiled)
200 g of crab sticks (finely chopped)
1  can corn
5 eggs (chopped finely)
1 onion (finely chopped)
mayonnaise

Preparation:
1. Set aside a little corn for decoration. And the roses are made from tomato skins
2. The first layer - the third of the rice (or less), mayonnaise. Each layer is a well-packed with a spoon!
3. Then half of the eggs mixed in mayonnaise
4. Half crab sticks mixed with mayo
5. A layer of corn mixed with mayonnaise
6. Then another third of the rice mixed with mayonnaise
7. The remaining crab sticks, mayo. The whole onion, mayonnaise
8. The remaining eggs, mayonnaise
9. Place a plate on top of the mixing bowl and turn over just like an upside down cake.
10. Decorate with corn, "roses" from tomato skins and greens


Торт-салат

Ингредиенты:

чуть больше половины стакана риса (отварить)
200 г крабовых палочек (мелко порезать)
1 б. консервированной кукурузы
5 яиц (порезать мелко)
1 луковица (мелко порезать)
майонез

Приготовление:

1. Отлложим немного кукурузы для украшения. А розочки сделаны из шкурки помидора
2. Первый слой - 1/3 часть риса (или меньше), майонез. Каждый слой хорошо приминаем, утрамбовываем ложкой!
3. Затем половина яиц, майонез
4. Половина крабовых палочек, майонез
5. Всю кукурузу, майонез
6. Затем еще 1/3 часть риса, майонез
7. Оставшиеся крабовые палочки, майонез. Весь лук, майонез
8. Оставшиеся яйца, майонез
9. Оставшийся рис. Сверху ставим блюдо, на котором будет лежать наш салат. И переворачиваем. Чашку аккуратно снимаем. Чем плотнее мы приминали слои, тем устойчивее будет тортик-салат
10. Украшаем кукурузой, "розочками" и зеленью

Thanks Jay, and hoping you can try some of them.

Unfortunately I can't cook!!  What I do with food would be an insult to call it cooking! I do do BBQ  and salads-- so seeing some of the above are quite motivated to show some patience and try some of the more simple recipes.
As an aside-- I live in a large multi-cultural city that  the food of many migrants has had a huge impact on  eating styles. At different times migrants from eastern Europe have come here and bought their culture and style of food with them.For me that meant far less surprises in food as I saw much that was already familiar to me.

"Салат Нежное облако" (Soft cloud salad)



Locals call it "Soft Cloud Salad" and if you try this recipe you'll learn why.

Ingredients:
Eggs - 6
Chicken breast - 300 g
Cucumber - 2
Carrots (medium) - 2
salt
mayonnaise
Pineapple (canned, rings) - 2 to 3 pieces.

Boil chicken breast and then chop it finely while adding salt and mayonnaise, mix well.

Place the chicken-mayonnaise mixture into a large dish.

Boil eggs, cool, separate the whites from the yolks.

Boil carrots gently after grating into small pieces.

Slice cucumbers and let stand on towel to drain excess liquid.

Using the chicken as a base, lay carrots (with a little salt), pour the mayonnaise, then grated egg yolks with mayonnaise, then layer cucumber and egg whites mixed with mayonnaise, and finally finish with a layer of cucumber and egg yolks mixed in mayonnaise at the top.

Garnish with pieces of pineapple and dollops of mayonnaise.

Салат "Алёнка"/Salad "Alyonka"



Ingredients:
750 g mushrooms
400 g of crab sticks
5 hard-boiled eggs
4 fresh cucumbers
mayonnaise
parsley
1-2 onions

Saute the mushrooms with onions, cut the cucumbers into cubes.

Dice the crab sticks and eggs.

Mix, add salt, season with mayonnaise and garnish with parsley.


Салат "Алёнка"

Ингредиенты:
750 г шампиньонов
400 г крабовых палочек
5 вареных яиц
4 свежих огурца
майонез
зелень петрушки
1-2 шт. репчатого лука

Грибы поджарить с луком. Огурцы порезать кубиками. Крабовые палочки - соломкой, яйца - кубиками.

Все смешать, посолить, добавить петрушку.
Заправить салат майонезом.

Salad French




Mayo, a staple of life in cold climates and it helps keep food from spoiling and perhaps just one more reason why we bake chicken in mayo, stir fry fish in mayo, use mayo on many types of salads, etc. This mayo consuming salad is called a "French" salad and yes, it is popular in France and was imported to Eastern Europe. This is very quick and easy to make. Prepare all the ingredients with a grater and large  bowl.

Ingredients:
2 apples
4 boiled eggs
2 fresh carrots
mayonnaise
onion
cheese


Preparation:
1 layer - scalded onions, then spread mayonnaise
2 layer - 1 apple, grate, spread with mayonnaise
Layer 3 - 2 eggs, grate, spread with mayonnaise
4 layer - 1 carrot, grate, mayonnaise
5 layer - cheese, grate.

Repeat layers to the top of the bowl. Set in fridge to chill for 15-20 minutes before serving.

Food author Selmak Henissi of Petite Plates did a piece on Russian salads called Walking Thru the Russian Mazes and linked the Mendeleyev Journal page on salads as part of her examples.

Henissi also spoke with a group at Saint Nicholas Russian Orthodox Cathedral in Washington, DC about Russian food traditions.

Green bean salad with egg





Ingredients:
400 g green beans
4 eggs
1-2 cloves of garlic, peeled
1 tablespoon olive or sunflower oil
Mayonnaise to taste


Preparation:
1 Boil hard boiled eggs and cover with cold water.

1 Peel and cut green beans. Boil water, add salt to taste, add the beans and boil until desired softness (5 minutes or less). Rinse the beans in a colander under cold running water.

2 Heat a frying pan in 1 tablespoon of olive oil over medium heat, add the green beans and saute 2-3 minutes, stirring occasionally.

3 Transfer the beans in a salad bowl, squeeze the garlic on top.

4 Peel the eggs, cut them into slices and add to the bowl with the beans.

5 Salt to taste, season with mayonnaise and mix.
